This meal was made in under 15 minutes. It was one of those “what am I going to have for lunch?” kind of meals that was really very tasty and worth sharing. The salmon would work well with Pak Choi, chard or kale etc. I served mine with rice, but noodles would work perfectly. ⠀

INGREDIENTS ⠀

Serves 2⠀

2 Salmon fillets ⠀
100g fine asparagus tips⠀
150g spinach ⠀
Optional sesame seeds ⠀
⠀
Glaze⠀
1 teaspoon white miso paste ⠀
1 teaspoon honey⠀
1 tablespoon soy sauce ⠀
⠀
METHOD ⠀
⠀
Mix the glaze together in a bowl and use 2/3 of it to coat the salmon. Season and roast for 7 minutes at 220 degrees.⠀

Steam the asparagus and spinach for 2 minutes and drain. ⠀
⠀
Serve with jasmine rice and drizzle the vegetables and rice with the remaining glaze.⠀
