Ready in just 15 minutes, all cooked in one pan and comes in at approximately £1.40 per person! What’s not to love? I’ve said this before, but I love how fresh gnocchi can be pan fried and doesn’t have to be boiled like pasta. In fact I think it is actually better using this method, as the gnocchi absorbs all the delicious flavour in the sauce rather that salted water. Fresh gnocchi has a fairly long ‘best before’ date, so a good ingredient to have in your fridge for a rainy day. Have you tried pan frying gnocchi?

INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 onion - finely chopped
3 cloves garlic - crushed
250g chestnut mushrooms - sliced
80g fresh spinach
1 teaspoon butter
450g fresh gnocchi @dellugo
1 ball burrata
Optional truffle oil to serve @belazu_co

METHOD
Sauté the onion in olive oil until soft. Add the garlic for 2 minutes. Now add the mushrooms and season generously. Cook until soft. Throw in the gnocchi and the butter, cook stirring on a occasion until warm. Add the spinach and cook until wilted. Check the seasoning. Top with the burrata and drizzle with truffle oil.
