I made this bowl of deliciousness with no intention of posting it on social media but as a quick and easy lunch during the week. As it was so simple I thought it was a good opportunity to show that eating well doesn’t have to be complicated or have to use a million pots and pans. In the recipe I’ve suggested on of the pre-packed stir-fry Vegetables (all the supermarkets have them) this way there is no waste and no need for any chopping whatsoever. Just the use of a little grater for the garlic and ginger.

INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 Salmon fillets
1 pack of stir fry veg - I used M&S rainbow veg
200g cooked noodles or 100g dry noodles
1.5 - 2 tablespoons miso paste (adjust to taste)
1.5-2 pints hot water
2 teaspoons grated ginger
2 cloves garlic - crushed
Optional -
red chilli 🌶 sliced
Lime
Coriander
METHOD
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pour the water and miso paste into a saucepan bring to a simmer, stir until dissolve. Add the salmon fillets with the garlic and ginger and gently simmer for 5 minutes making sure you don’t boil. Now add the vegetables and dry noodles (if you are using them) simmer for another 5 minutes. Now add the pre-cooked noodles and warm through. Sprinkle with chilli, coriander and a squeeze of lime. Thats it!
