Prawn Tomato & Garlic Crostini


The perfect last minute lunch when a friend pops round. This 10 minute lunch was delicious! Made with only a few ingredients, but a total joy to eat. Make sure you give it a go this week.


Serves 2

INGREDIENTS

2 large slices of sourdough - toasted

2 cloves garlic - crushed

150g - 200g tomatoes - chopped

150g raw prawns

Basil

Salt & Pepper


METHOD

Sauté the garlic in olive oil for one minute and then add the tomatoes. Season generously and pan fry until they start to release their juices. Add the prawns and cook until pink. Spoon over the toast and finish with basil olive oil and a good grind of pepper.
