This is the perfect family midweek meal all cooked in one pan! It certainly covers every food group and contains 4 of your 5 a day thanks to the delicious vegetables from @blas_y_tir Thoroughly enjoyed by all in my house and it came in at approximately £2 per person. 1 red onion - sliced into 10 wedges
2 leeks - sliced
150g cauliflower florets
5 garlic cloves - whole with skin on
1-2 teaspoons fennel seeds
1 tablespoon balsamic vinegar
1 tablespoon olive oil
450g fresh gnocchi
10-15 cherry tomatoes
Optional basil to serve
Preheat the oven to 200 degrees.
Add the sausages, leeks, cauliflower onion, garlic and fennel seeds to a large roasting tray. Drizzle with olive oil and balsamic vinegar and season generously. Roast for 20 minutes. Now add the gnocchi and the tomatoes, mix well and coat with the juices. Check for seasoning and back in the oven for 15-20 minutes.
