Sticky Soy & Orange Salmon




Not an easy one to make pretty, but boy was this good. I’m very lucky that both boys enjoy fish, particularly salmon, but it hasn’t always been that way. I’ve never pushed my boys into eating things they don’t want, but what I have found over the years is that if they see you or their older siblings eating something, eventually they come around in their own time. This recipe is a really good way to introduce salmon to kids. Serve with jasmine rice, noodles and some lovely green veg on the side and you have a beautifully well balanced quick meal. INGREDIENTS - serves 4

Marinade

Juice 1/2 orange

1 clove garlic - crushed

3 teaspoons honey

1 tablespoon soy sauce

1 spring onion - chopped

1/2 teaspoon of corn flour


4 salmon fillets

1/2 orange - sliced


METHOD

Preheat the oven to 210 degrees.

Mix the marinade ingredients together in a bowl. Marinate the salmon for 30 minutes. Place the salmon (including the marinade) on a baking tray. Add the orange slices and roast for 10 minutes. @ Kent, Kent, United Kingdom
